Adkins graduated with a Bachelor of Science degree from Middle Tennessee State University in History. He also holds Masters Degrees in Health and Human Performance from McNeese State University and Masters in Art in Teaching from Cumberland University.

Adkins has coached numerous players that have gone on to play at all levels of college football and the NFL.

A native of West Liberty, Ky Josh and his wife Jen, have two children Emmy (5) and Ellie (2).
